Easy Cheesy Eggs With Spinach

This is a quick, low carb, egg white breakfast that tastes delicious.

I modified a recipe by Tim Ferris. I like this breakfast because it's quick, protein rich, easy, and tasty.

Ingredients

  • 1/4 cup egg whites
  • 2 oz. spinach
  • 1 tbs. taco seasoning
  • salt and pepper to taste
  • 2 tablespoons of Olive oil
  • 2 tablespoons of red salsa
  • 1 oz. shredded cheddar cheese

Directions

  1. Coat a microwave safe bowl with olive oil. This helps keep the eggs from sticking to the bowl. Stir all the ingredients into the bowl. Place in the microwave. Cook for 4 minutes. You can eat them by yourself or with tortillas.
