I modified a recipe by Tim Ferris. I like this breakfast because it's quick, protein rich, easy, and tasty.

Ingredients
- 1/4 cup egg whites
- 2 oz. spinach
- 1 tbs. taco seasoning
- salt and pepper to taste
- 2 tablespoons of Olive oil
- 2 tablespoons of red salsa
- 1 oz. shredded cheddar cheese
Directions
- Coat a microwave safe bowl with olive oil. This helps keep the eggs from sticking to the bowl. Stir all the ingredients into the bowl. Place in the microwave. Cook for 4 minutes. You can eat them by yourself or with tortillas.
